Ettore Bocchia is a revolutionary. He believes in Utopia and only objectivity – or what he considers to be objectivity – stops him. He is a revolutionary because he has transformed the general approach to cooking, not only formally, as many if not all try to do, but materially. Only the chosen few can do this! He has immersed himself in this subject matter; he has “gone inside” it, studied it, taken it apart and put it back together. Not only has he deconstructed tortelli, scattering their ingredients on a plate – a very popular coup de theatre among chefs. He has worked together with a Professor in Food Science in order to understand, investigate, analyse, control, discover and experiment because he has only had one goal in mind: perfection.
